I had a number of you ask me for the recipe for the pasta salad, so here it is:
Spinach Pasta Salad
2- 16 oz boxes bow tie pasta (only use 1 1/2)
1 Bunch Spinach- Chopped (I use the bag salad)
3 tomatoes- Chopped (I use Roma tomatoes)
1/2 cup black olives
3/4 cup feta (I use the entire container- usually between 4 and 6 oz)
For the dressing:
3/4 cup Olive oil
3/4 cup white wine vinegar
3 cloves garlic minced
3 tbsp Grey Poupon
1/2 cup grated Parmesan cheese
2 tbsp lemon pepper
salt and pepper to taste
Blend above ingredients together in food processor/blender
Mix together salad ingredients- leave out a little spinach and pasta. Put 1/2 salad dressing on and toss. Put in rest of pasta and spinach and add rest of dressing. Toss and chill 1 hour before serving (I usually chill overnight, or at least 4 hours)
Enjoy! Just typing it up made me hungry for it, I think I will go into the kitchen and get some of this yummy deliciousness out of the fridge! Thank you Melissa for passing on such a great recipe- I still need your one for the salad you made with the strawberries and cucumbers!

Hi - A friend forwarded this to me because I was looking for a yummy pasta salad recipe. I can't wait to try it. How long does it stay fresh? I know spinach can get a little yucky sometimes. I'm getting ready to make this tomorrow! I love new recipes.
